Peanut butter biscuits

60g margarine or softened butter
½ Cup castor sugar
1 egg
1 tsp vanilla essence
3 Tblspns peanut butter
1¼ Cups rice flour
¼ Cup potato flour
1tsp gluten free baking powder

Preheat oven to 180° C and grease a large biscuit tray. Cream butter and sugar until light and fluffy. Add egg and vanilla then mix well. Add peanut butter and mix well. Sift in flours and baking powder and mix until well combined. Place spoonfuls onto baking tray and flatten with a fork.

For crunchy biscuits, bake for approximately 25 mins until biscuits dont squish or are turning golden brown. For chewier biscuits, bake for approximately 15 mins.

Makes around 20 biscuits.
