Chocolate Chippies

Ingredients:

  • 75g soft butter or margarine
  • 50g brown sugar
  • ¼ cup caster sugar
  • 1 egg, beaten
  • A few drops vanilla essence
  • 75g rice flour
  • 75 corn flour
  • 1tsp GF baking powder
  • pinch salt
  • 23 cup chocolate chips

 

Method:

  1. Preheat oven to 190°C. 
  2. Beat butter, caster sugar and brown sugar until light & fluffy. 
  3. Beat in egg and vanilla essence.
  4. Fold in rice flour, corn flour, baking powder & salt.
  5. Fold in chocolate chips.
  6. Spoon onto greased baking tray and bake for 10-15 mins.

Makes approx 24 biscuits.

Easy peasy to make - threw it all in the blender then stirred in choc chips, rolled into balls and baked - and MAN they are delish! Great recipe - will definitely be a staple one here.
