Almond Biscuits

Ingredients

  • 50g butter, softened
  • ½ Cup castor sugar
  • 2 eggs
  • 2 tsp natural vanilla essence
  • 1 Cup ground almonds
  • 1 Cup rice flour
  • ½ Cup corn flour
  • 50g sliced almonds

 

Method

  1. Preheat oven to 180 ° C.
  2. Cream butter and sugar.
  3. Beat eggs into mixture one at a time, then stir in vanilla.
  4. Add ground almonds and flours, then mix until almost combined.
  5. Add sliced almonds and mix until ingredients are combined.
  6. Drop large spoonfuls of mixture onto two biscuit trays, lined with baking paper, ensuring plenty of space is left around each for spreading.
  7. Bake for 12-15min, or until biscuits begin to brown slightly.
Makes approx 12 large biscuits.
