Mary Schaap's Florentine Squares

8oz cooking chocolate
4oz castor sugar
4oz dessicated coconut (long shredded is best)
2oz glace cherries
Line a swiss roll tin with greaseproof paper
pour into lined tin & spread evenly
leave to set
Cream butter & sugar. Add beaten egg & remaining ingredients & stir in.
Spread over chocolate base
bake in middle of oven at 160C for 45 minutes. Allow to cool. Cut part way into squares. Complete cut through when cold.
* ingredients can be varied as follows:
Any or all - raisins, chopped apricots & walnuts can be used (2oz of each).
