Faux Muesli Bars

Ingredients

  • 1 Cup dessicated coconut
  • 23 Cup brown rice flour
  • 13 Cup buckwheat flour
  • 13 Cup soft brown sugar
  • 1 tsp GF baking powder
  • 1 tsp ground cinnamon
  • 13 Cup vegetable oil
  • 2 eggs
  • 13 Cup saltanas 
  • 13 Cup choc chips
  • ¼ Cup seeds e.g. sunflower, flax, pumpkin (I used pumpkin and flax)

Method

  1. Preheat oven to 180°C.
  2. Line a 23cm square baking tin with a sheet of baking paper.
  3. Place coconut in a large bowl and sift in flours, sugar, baking powder, and cinnamon. Stir to combine.
  4. Add oil and eggs, then mix to combine.
  5. Add seeds, fruit and choc chips, then mix well.
  6. Press firmly into pan and bake for 10-15 mins or until beginning to turn golden brown.
  7. Cool on a wire rack and slice into squares.

Makes approx 20 bars.

Delicious! I added a bit more of the choc chips, seeds and fruit, but this made a couple of the pieces break in half as there wasn't so much holding it together.
