Could also be iced with icing sugar, water and cocoa but personally I found them sweet enough.



¾ cup Rice flour
1 cup Quinoa flakes
½ cup Rice flakes
½ cup Buckwheat Groats
2 tablespoons Sesame seeds
2 tablespoons Cocoa
¾ cup Sugar
2 tablespoons Golden syrup
125 g Butter
1 teaspoon Bicarbonate of soda
2 tablespoons Boiling water


Preheat the oven to 160°C. Mix the flakes, groats, seeds, flour, cocoa and sugar together in a bowl.
Melt the golden syrup and butter together. Mix the baking soda with the boiling water, then add to the butter.
While the mixture is still foaming, add it to the dry ingredients and mix well.
Spoon nto a greased sponge tin and press down until it’s quite firm. Bake for 30 minutes.
Once cool tip out of tray and cut into pieces. Store in airtight container
