Ingredients
- 250g cold butter
- 1 cup cornflour
- 2 cups GF flour
- 3⁄4 cup sugar
- 1 tsp salt
- 2 Tbsp castor sugar to finish
Method
- Preheat oven to 160°C
- Sift flours into a food processor. Add sugar, salt and butter
- Mix or pulse to breadcrumb consistency
- Tip into a small lined baking tray or tin and even out the thickness, pressing together but not squishing it too hard
- Bake for 15min
- Cut into 2 inch squares while still warm
- Sprinkle with castor sugar
- Allow to fully cool before lifting
Tips: use a small enough tray to ensure the shortbread isn't too thin or it will snap - see photos, ours were ok but about the minimum.
