Ingredients:

1tsp white vinegar

13 cup oil

3 rounded tsps raw sugar

250ml cold water

250ml boiling water

225gms soy flour

300gms potato flour

75gms buckwheat flour

25gms arrowroot flour

1 rounded tsp Guar gum

2 rounded tsps salt

1 rounded tsp yeast (NOT breadmakers yeast!!)

Method:

1) Put vinegar and most of the oil into a mixing bowl (I use Canola oil)

2) Put the last bit of oil into the breadmakers container and swirl it round to coat the bottom.

3) Put the cold water into the mixing bowl, and add the boiling water.

4) Add the sugar.

5) Weigh the flours, add the Guar gum and salt.

6) Sift flours etc into the bowl.

7) Mix it all a bit, not much as the breadmaker will do that.

8) Put mixture into breadmaker.

9) Turn the breadmaker on and set it on 4. Chose 1kg setting. Press start.

10) Then and only then sprinkle the yeast on top. Close top.

It takes 2 12 hours in my breadmaker. It freezes well. Any gluten free flours or mixes can be used. As I reckon rice flour tends to make the bread solid, I like the potato flour instead, which makes it lighter. I bought the Sunbeam Breadmaker as it has the Coeliac Society seal of approval.
