150g dried fruit - any combination you desire of raisins, currants, sultanas and candied peel

½ Cup rice flour for crosses
clear honey or sugar water for glaze if desired
Method
Beat egg into milk and add to breadmaker pan.
Add margarine to breadmaker pan.
Add flours, gum, sugar and spices to pan.
Sprinkle yeast over the top of the other ingredients and set breadmaker to dough for 3-5min to allow ingredients to combine, scraping down sides if necessary.
Add fruit to breadmaker and allow to become well mixed through the dough.
Grease a chopping board and baking tray. With oiled hands, divide the mixture into 9 or 12 equal parts for medium or small buns and gently roll each in your hands to form a ball. The mixture should be rubbery and shouldnt stick to well oiled hands if handled carefully.
Place balls on baking tray and cover with greased cling film and allow to rise in a warm place for 45min. Preheat oven to 160° C and mix rice flour while gradually adding water until thick paste is achieved. Pipe paste over buns to form crosses.
Bake for approx 15min or until a skewer comes out cleanly.
Brush with honey or sugar water if desired.
Makes 9 medium buns as shown in the photo or 12 small buns.
This recipe is easy to make and the result is pretty darn good. The buns taste great and it's hard to add too much spice or fruit, so don't be shy! They also are bun shaped, not muffin or pie shaped like GF buns I've bought at bakeries.
