Easy Feta & Herb Bread

Ingredients

  • 200g polenta
  • 100g rice flour
  • 50g milk powder
  • pinch salt
  • 7g sachet instant yeast
  • 2 teaspoons caster sugar
  • 2 teaspoons xanthan gum
  • 3 eggs, beaten
  • 2 tablespoons fresh mixed herbs, chopped
  • 450ml tepid water
  • 100g feta cheese, crumbled

Method

  1. Preheat oven to 180°C.
  2. Grease and line a 900g loaf tin.
  3. Sift polenta, flour, milk powder and salt into a large bowl and stir well to combine. 
  4. Stir in yeast, sugar and xanthan gum
  5. Place eggs, herbs & water in a bowl and mix together. Stir this mixture into the dry ingredients and combine to form a soft dough.
  6. Beat for 5 minutes then stir in feta
  7. Spoon mixture into tin and cover with a clean, damp teatowel and leave in a warm place to rise for 30mins to near the top of the tin.
  8. Bake for 45mins until brown and hollow when tapped. 
  9. Remove loaf from oven and cool on a wire rack
