Edmonds Banana cake

Ingredients

  • 125g butter
  • 12 cup brown sugar
  • 1tsp vanilla essence
  • 2 large bananas very ripe, mashed
  • 1 egg
  • 1 12 cups Edmonds GF self raising flour
  • 2 12 Tbsp milk
  • 12 cup mix chopped walnuts (or other nuts) and raisins or currants

 

Method

  1. Preheat oven to 180°C (160°C for a fan forced oven)
  2. Grease loaf tin and line with baking paper
  3. Put butter, sugar & vanilla in a medium saucepan
  4. Strir over a moderate heat until it melts. Remove from heat and cool.
  5. Mash bananas and stir into butter mixture. Mix well.
  6. Lightly beat egg, add milk then add butter mixture to the egg/milk mixture and mix
  7. Fold in the sifted flour. Lastly fold in the nuts and raisins
  8. Pour mixture into prepared tin.
  9. Bake for 30-35 minutes or when a skewer inserted into the centre comes out clean
  10. Cool in tin, then turn out onto wire rack

Delicious banana loaf. Not crumbly.
Baked it more recently and found it dried out quite fast - only good on the day.
