2 eggs

1 12 cups grated carrot

34 cups walnuts

34 cups oil

1 tspoon vanilla essence

1 cup gluten free baking mix ( I used Edmonds baking mix)

1 tspoon mixed spice 

12 tspoon salt

1 tspoon baking soda



1. Preheat oven to 180C

Mix dry ingredients

2. Add egg, sugar, vanilla and oil and beat well.

3. Add carrots and walnuts, mix without beating.

4. Pour into well greased 24cm springform tin - (preferbly line with baking paper for best results)

5. Bake for about 50 minutes or until skewer inserted into cake comes out clean.



butter/cream cheese icing:

40g butter

120g cream cheese

vanilla to taste

1 - 2 tspoon lemon juice (if desired) 

2 cups icing sugar


Mix well before spreading over cake
