Carrot and Walnut cakeCarrot and Walnut cake
Ingredients:
1 cup gluten free baking mix ( I used Edmonds baking mix)
1 tspoon mixed spice
1⁄2 tspoon salt
1 tspoon baking soda (unless using self-raising GF flour)
2 eggs
1⁄3 cup sugar
1 tspoon vanilla essence
1 1⁄2 cups grated carrot
3⁄4 cups vegetable oil
1 cup walnuts, roughly chopped
3⁄4 cup sultanas
Method:
- Preheat oven to 180C
- Mix GF flour, salt, mixed spice and baking soda
- Add eggs, sugar, vanilla and oil and beat well.
- Add carrots and walnuts, mix without beating.
- Pour into well greased 24cm springform tin - (preferbly line with baking paper for best results)
- Bake for about 40-50 minutes or until skewer inserted into cake comes out clean.
Icing:
butter/cream cheese icing:
40g butter
120g cream cheese
vanilla to taste
1 - 2 tspoon lemon juice (if desired)
2 cups icing sugar
Mix well before spreading over cake
