Carrot and Walnut cake

Ingredients:

1 cup gluten free baking mix ( I used Edmonds baking mix)
1 tspoon mixed spice
12 tspoon salt

1 tspoon baking soda (unless using self-raising GF flour)

2 eggs

13 cup sugar

1 tspoon vanilla essence

1 12 cups grated carrot

34 cups vegetable oil

1 cup walnuts, roughly chopped

34 cup sultanas 

 

Method:

  1. Preheat oven to 180C
  2. Mix GF flour, salt, mixed spice and baking soda
  3. Add eggs, sugar, vanilla and oil and beat well.
  4. Add carrots and walnuts, mix without beating.
  5. Pour into well greased 24cm springform tin - (preferbly line with baking paper for best results)
  6. Bake for about 40-50 minutes or until skewer inserted into cake comes out clean.

 

Icing:

butter/cream cheese icing:

40g butter

120g cream cheese

vanilla to taste

1 - 2 tspoon lemon juice (if desired) 

2 cups icing sugar

 

Mix well before spreading over cake
