Blueberry and Banana breadBlueberry and Banana bread
Ingredients
- 175g GF self raising flour (I used Edmonds)
- 100g brown sugar
- 1⁄4 t salt
- 2 ripe bananas
- 110g melted butter
- 2 large eggs
- 1 t vanilla extract
- 100g blueberries
Method
- Preheat oven to 175°C
- Line a loaf tin with baking paper - let it overhang so that it's easy to remove the cake
- Mix flour, sugar and salt in a bowl and set aside.
- In a separate bowl, mash banana with a potato masher or fork.
- Melt butter and add to banana
- Add vanilla and eggs to banana mixture and mix.
- Combine wet and dry mixtures together.
- If using frozen blueberries, defrost and pat dry with paper towels.
- Coat berries in a little GF flour and mix most of them into the batter, leaving a few aside.
- Pour batter into loaf tin and sprinkle remaining berries on top
- Bake for 55 min
- Place tin on cooling rack and allow to fully cool in the tin.
