From Tauranga comes a new book written by a mother and daughter duo who found themselves having to eat gluten free after a Coeliac diagnosis more than 12 years ago. “Who could stomach the thought of the crumbly, cardboard or brick like, gluten free bread that was on offer back then? Not us!” proclaimed Vanessa. Drawing on their love of baking, Mary and Vanessa Hudson embarked on a quest to create delicious, visually appealing gluten free foods. Wanting to share their creations with the rest of New Zealand, Goodness Me began selling their gluten free bread and baking mixes online.
Over the years, Mary and Vanessa developed such a large array of tasty recipes that it seemed only right to share their secrets with fellow Coeliacs. "Life's too short to eat terrible food" say Mary and Vanessa, "it is our desire that everyone will be able to easily and successfully recreate the recipes in our cookbook, even someone who has never baked before.
