Low-fat Crème Brûlée

A lot of people have had trouble getting this recipe to set so I reduced the milk from 3 cups to 2. This means you can only make 5 (just) not the usual 6. I will post an improved recipe for 6 when I try again but this one worked well and was delicious, just try not to froth the custard!

 

Ingredients:

2 Cups full cream milk

½ Cup sugar

6 Egg yolks

1 tsp real vanilla essence

2 T sugar

 

Method:

  1. Preheat oven to 180°C and boil the jug.
  2. Whisk milk, sugar and egg yolks together, trying not to froth the mixture.
  3. Pour mixture into ramekins and place in an oven proof dish.
  4. Pour boiling water into dish until it is halfway up the outside of the ramekins. 
  5. Bake for approximately 40 mins until custard is set -jiggle the dish to test and use a skewer if really unsure.
  6. Allow to cool in the dish of water for 15 mins, then replace the water with cold water and allow a further 15 mins cooling.
  7. Refrigerate for 2 hours or more.


Topping:

  1. Sprinkle sugar over the top of the custards and jostle off any excess.
  2. Caramelize sugar with a blow torch until it begins to brown, then wait 10 seconds.
  3. Heat sugar again as evenly as possible until it begins to burn a little. Repeat for all ramekins and serve immediately.
