Ingredients

1 x 425g can of chickpeas
¼ cup uncooked long grain rice (the recipe called for brown rice but for under 1 years I used basmati)
1 onion finely chopped
1-2 cloves garlic - crushed or minced

Ideas to add - pesto (tomato or basil), GF chicken stock, cooked bacon, sun dried tomatoes, BBQ sauce, anything you like - try to stay away from too liquidy additions as it will make the mixture too sloppy.

GF flour to coat

Method

Cook the rice according to instructions on packet. Saute onion and add garlic. Continue to saute for a few minutes. Drain chickpeas and put into a blender. Add cooked, drained rice and onion/garlic mixture. Now you can add your secret ingredients. Blend everything on high, scraping down the sides a few times. Tip some GF flour onto a plate and coat your hands in flour which will make the mixture easier to handle. Pick up small amounts of mixture and shape into balls. Drop it into the flour and flatten out into a medallion/nugget size and flip over to coat the other side. Transfer to another plate. Repeat until all the mixture is gone and place in the fridge for at least 30 mins to set. Heat oil in a frying pan and shallow fry at a med to high heat for 2-3 mins each side. Makes around 15-18 depending on the size you want them. You could also make burger patties.
