60g margarine or softened butter
13 cup sugar
3 eggs
75ml water
1¼ cups Bakels Gluten Free Baking Mix
75g macadamia nuts, chopped
½ cup white chocolate chips/bits
1 Tblspn icing sugar

Preheat oven to 180° C. Grease muffin trays or line with paper cups.

Cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add water and mix well. Add macadamias and white chocolate and mix through. Spoon into muffin trays and bake for 15-20 mins until a knife/skewer comes out clean. Place on a wire rack to cool and lightly dust with icing sugar.

Makes 9 large muffins.
