Banana Choc Chip

Ingredients

  • 50g softened butter, roughly chopped
  • 12 Cup brown sugar
  • 14 Cup castor sugar
  • 2 ripe bananas
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 34 Cups Bakel's baking mix
  • 12 Cup choc drops or choc chips

 

Method

  1. Preheat oven to 170°C and lightly grease muffin tray.
  2. Place butter and sugars in a food processor and whiz until combined and smooth.
  3. Add bananas and blend thoroughly. 
  4. Add eggs and vanilla and blend well.
  5. Place baking mix in a bowl, add wet mixture and mix to combine.
  6. Stir in choc chips.
  7. Bake for 15mins.

Makes 12 medium sized muffins.
