Ingredients
- 50g softened butter, roughly chopped
- 1⁄2 Cup brown sugar
- 1⁄4 Cup castor sugar
- 2 ripe bananas
- 2 eggs
- 2 tsp vanilla essence
- 1 3⁄4 Cups Bakel's baking mix
- 1⁄2 Cup choc drops or choc chips
Method
- Preheat oven to 170°C and lightly grease muffin tray.
- Place butter and sugars in a food processor and whiz until combined and smooth.
- Add bananas and blend thoroughly.
- Add eggs and vanilla and blend well.
- Place baking mix in a bowl, add wet mixture and mix to combine.
- Stir in choc chips.
- Bake for 15mins.
Makes 12 medium sized muffins.
