These scrumptious cupcakes are sure to chase your hunger away, they’re easy quick and addictive! serving 1cake or 12 biiiiig cupcakes or 17 small.
Ingredients:
1 cup sugar 3 large eggs 125g butte 1 lge or 2 small oranges 1 cup tapioca flour 2 tsp baking powder 1tsp guar gum water 1 tblsp lemon juice
Method:
1. preheat oven to 180 ° (170 fanbake) with the rack just bellow the middle. line a 21 cm ring pan with the baking paper or teflon liner and coat well with non stick spray.
2. thinly peel oranges with a vege peel.put the peelings in a food processor with sugar and process until finely chopped.add the softened but not melted buter and eggs and process until thoroughly mixed. measure the flours, add the orange’s with water and the lemon juice. process briefly , just enough to mix,then spoon into the prepared ring pan.
3.bake for 35-45 mins till skewer comes out clean.leave to stand for 10 mins.then remove from tray/pan. invert on a rack, and dust generously with icing sugar or when cool spread with orange or lemon icing.
4. for cupcakes divide the mixture between 12 or so paper muffin cups filling eaach up 2⁄3 full. bake at 180 for 10-12 mins or until firm when lightly pressed in centre.
