2 cups gluten free self raising flour
4 eggs
100ml milk or water
250g of sundried tomatoes & peppers - I used a punnet from Pams - check it is gluten free
250g of olvies and/or pesto pieces - again I used a punnet from Delmaine - check it is gluten free
150g feta if desired
1 pinch salt
Mix all ingredients together - don't overmix
Put into greased patty pans or paper muffin cups
This makes 12 jumb muffins
Bake in fan oven @ 180 for approximately 15 minutes - or when skewer comes out clean.
Enjoy warm with butter or margerine.
Note if you want to make them dairy free use water instead of milk and leave out feta
